Healthy While Attending Zoom University

During quarantine, I got into a good and healthy eating routine while being at home. I originally wrote this post during summer (but didn’t post). However, surprisingly this post is still on point for being healthy while attending Zoom University (thank you, COVID).

I have truly been listening to my body during this crazy time and eating intuitively! I eat what my body is craving, however, I try to swap out certain foods for healthier alternatives.

Every morning I wake up and chug a large glass of water, or have hot lemon water. This is important to add this to what I consume in a day. It is the first thing I put into my body (hydration) when I wake up. It is the best way to start the morning and extremely important for so many reasons. Then I just have to have a cup of coffee with a splash of unsweetened Califia farms almond milk (if I’m specific). It’s my “ok, let’s get ready for Zoom University” must-have. Now, I do go through phases where I either want my coffee iced or hot. Right now, I am drinking hot, but I will switch it up (I do miss the Nespresso we have at home).

Now for my GO-TO BREAKFAST MEALS

I love a good smoothie and the blueberry smoothie is a great start to the morning post workout. Here is a rundown of how to make the blueberry smoothie and a few other breakfast meal options.

  • Blueberry Smoothie
  • Coconut yogurt + topped with 1/2 cup fruit and granola (right now I love adding goji berries for extra antioxidants!)
  • Avocado toast with an over-easy egg or tomatoes (eat this for either breakfast or lunch)
  • Banana oat pancakes
  • Green juice (usually celery juice from trader joes or the brand Suja uber greens)

My breakfast and lunch are usually combined. I often don’t eat until around 11:00- 12:00 in the afternoon. If I have a smoothie, I will often get hungry for lunch. However, if I have something heavier, such as avocado toast, I will eat something lighter in the late afternoon.

MY GO-TO LUNCH MEALS

  • Chickpea salad (I will be posting the recipe)
  • Avocado toast
  • Lettuce-wrapped shrimp or tacos
  • 2 eggs scrambled on cauliflower thins with primal kitchen spicy mayo +avocado (inspired by The Skinny Confidential )
  • Arugula salad

MY GO-TO DINNER MEALS

These meals are in no special order and are all really yummy! Remember it’s all about staying Healthy While Attending Zoom University.

  • Bolognese: quinoa/brown rice pasta + frozen zoodles +ground turkey (all from Trader Joes) + Rao’s marinara sauce
  • Veggies with pasta and pesto sauce (same pasta from Trader Joes)
  • A big salad with protein
  • Fish or chicken breast baked with veggies

When it comes to dinner, I typically look at what I have eaten throughout the day and decide what I want for dinner. If I haven’t had greens at all, I will make sure I have some. I am not super strict with myself when it comes to dinner. If I am completely transparent, some days I eat Annie’s mac n cheese or chipotle for dinner. It’s ok to treat yourself once and awhile. Just remember to treat yourself and not make it a daily routine.
