Blueberry Smoothie Recipe

In honor of National Smoothie Day, I thought it was crucial that I share one of my favorite blueberry smoothie recipes! I made this smoothie almost every single day my freshmen year of college… yep in the dorms. I bought frozen blueberries (super cheap at trader joes) and always kept them stocked in my little freezer along with frozen cauliflower. This smoothie became my go-to, and my friends would beg me to make it for them.

Recipe

  • Handful of ice
  • 1 cup of Almond milk (or liquid of choice)
  • 1/4 cup of Frozen Riced Cauliflower (just means it’s not chunks of cauliflower)
  • 1/2-1 cup of frozen blueberries
  • 1/4 of banana
  • 2 scoops Vanilla Collagen Protein powder
  • Handful of spinach

While living in the dorms, I didn’t always have all the ingredients on hand. I recommend buying everything from Trader Joes (especially the cauliflower I swear you don’t taste Trader Joes brand) because it is a lot cheaper. My hacks, if you are living in the dorm, is to take whatever they have in the dining hall to use in your smoothies (I had would keep zip block bags in my backpack and fill them up with spinach from the salad bar and ice).

You can modify this smoothie to whatever you have on hand! Sometimes I will add kale instead of spinach, or if I run out of blueberries, I will add more banana. The vanilla protein powder/ banana cancel out any taste of spinach (I sneak greens into my friend’s smoothies, and they never know). Sometimes I also add a tablespoon of probiotic coconut yogurt, which is amazing for your gut health! You can also turn this into a smoothie bowl by adding more ice and less liquid + toppings such as fresh fruit and granola.

On a side note I find the NutriBullet blender to be the best and super easy to store!
